Pasta Primavera

This Pasta Primavera recipe combines the wholesome goodness of Grandma’s Spaghetti Noodles with the fresh, bright colors of your favorite garden vegetables for a nutritious meal or side dish.

Serves : 6 servings
3 carrots, peeled and cut into thin strips
2 medium zucchini or 1 large zucchini, cut into thin strips
2 yellow squash, cut into thin strips
1 onion, thinly sliced
1 yellow bell pepper, cut into thin strips
1 red bell pepper, cut into thin strips
¼ cup olive oil
¼ cup fresh parsley, chopped
Kosher salt and freshly ground black pepper
1 tablespoon dried Italian herbs or Herbes de Provence
1 (11-oz.) package Grandma’s Frozen Spaghetti Egg Noodles
15 cherry tomatoes, halved
½ cup grated Parmesan


Meanwhile, prepare Grandma’s Frozen Spaghetti Noodles according to package directions. Drain, but reserve one cup of the cooking liquid.
Return vegetable mixture to medium heat and add cooked noodles and ½ cup of reserved liquid and toss to combine. Add cherry tomatoes and chopped parsley. Add small amount of more reserved cooking liquid or olive oil to moisten. Season the pasta with salt and pepper to taste. Sprinkle with Parmesan and serve immediately.

This recipe also makes a great side dish to serve with grilled sausage, chicken, or any meat of your choice.
